Wishing You All a Very Merry Christmas

I’m wishing each and every person who stops by a Merry Christmas!  I have enjoyed our blog time and getting to know you.  Please have a delightful time with your families near and far for after all….that is what the holidays are all about.

This year all the kids will be at our house so everyone is bringing all their gifts by to open with us.  We are stacked to the branches, as you can see.  Santa will only have to make one stop for several families, which should cut down on his stopping time. 🙂

And for those of you who would like to make a delicious gluten-free cookie for those who are gluten-free on your list I am posting a wonderful and simple cookie recipe here:

Christmas Cookies

Dry Ingredients

¾ c white rice flour

½ c potato starch

¼ c sweet rice flour

½ teaspoon baking powder

½ teaspoon salt

Wet Ingredients

½ c  granulated sugar

6 tablespoons butter, at room temperature

1 large egg

½ teaspoon vanilla extract

  1. Preheat oven to 350*…line baking sheet with parchment paper and set aside
  2. In a small bowl, sift together dry ingredients (do this three times)
  3. In bowl of stand mixer, cream together butter and granulated sugar until well combined
  4. Add egg.  Cream until thoroughly incorporated.  Be sure to stop mixer and scrape down sides and bottom of bowl at least once
  5. Add whisked dry ingredients.  Turn mixer to medium-low.  Mix until a dough forms.
  6. Scoop dough, about two teaspoon each, and roll into balls.  Roll dough balls into powdered sugar. Place cookies, about two inches apart, on prepared baking pan.
  7. Chill for ten minutes
  8. Bake cookies for 12-5 minutes or until cookies are firm and edges are golden brown.  Transfer cookies to a wire rack.  Repeat.

  1. Merry Christmas to you and Terry and all of your family. Enjoy! I will be with my little family Friday evening and Saturday. Am really looking forward to it. What I don’t get done by Friday just doesn’t need to get done…it can wait until next Christmas!!!
    It was 80* in Lubbock today, but is to be 43 on Christmas Day, so it will seem a bit more like a wintery Christmas.

  3. Merry Christmas from Grand Junction. 3:40 am and only 43 here….very strange weather indeed. I am still working my way from earliest posts, a few every evening or so and still enjoying them. Thanks for sharing your take on the your part of the world.

  5. We had a very nice Christmas here in Florida and hope yours was perfect for you. Having kids home just makes the day whatever day it is. Our daughter and fam. live near us so we enjoyed them. Our son and fam. live in Germany so we had a nice phone visit with them. We are braceing now for 3 nights of freezing weather, the farmers are trying to get pumps ready to start running water when it hits 32. The citrus can stand about 4 hours of 27 degree temps before freezing. Our kids are farmers so we watch the temps with them. The tomato fields are full with fruit but will be gone tomorrow I think.

  6. OMG! If these cookies bake up as good as the dough I’m going to be in heaven. Thank you. I’ve never baked a gluten free recipe in my life so these are a first. As I find more and more of my dog friends that have to have gluten free and can’t join us in the baking “pig out” at agility trials figured I’d give these a whirl. Can’t wait to taste the cookies but right now I gotta go lick the bowl!!!!
