Terry was able to combine until 7 last night…the cold and the moisture stayed off allowing the combine to work therefore, YEAH!!!! One field down and two more to go!
1/2 c butter, softened
3-3/4 c confectioners’ sugar
1/2 c sweetened condensed milk
1 teaspoon vanilla extract
2 c flaked coconut
2 jars (16 ounces each) maraschino cherries with steams, well drained and patted dry
2 packages (11-1/2 ounces each) milk chocolate chips
1 tablespoon shortening
1. In a large bowl, beat butter and confectioners’ sugar until smooth. Beat in milk and vanilla until well blended and mixture looks like softened butter. Fold in the coconut.
2. With moist hands shape 2 teaspoonfuls of coconut mixture around each cherry, forming a ball. Place on a waxed paper-lined baking sheet. Cover and refrigerate for 1 hour or freeze for 30 minutes.
2. In a microwave, melt chocolate chips and shortening; stir until smooth. Dip coated cherries into chocolate. Place on waxed paper; let stand until set. Store in an airtight container at room temperature for up to 1 month.
These never last 1 month at my house. I use them as gifts for employees and bosses and for those I like, but do not want to embarass with a fancy/smancy gift.

I love cc cherries, so much in fact that I don’t buy them. There are 10 in a box now and I eat until they are gone if I buy them. This recipe sounds really good. I will have to try it, should be a little healthy since it has fruit in it, right? 🙂

They look great! I can see why they would make great gifts. I am going to have to try to make some. If they turn out, tho, I ‘m afraid I will eat them ALL! They have to stand awhile to make the liquoer, don’t they? You are such a busy, talented soul!

I have a friend that makes these but she makes the cherry stem a tail, uses a red candy for the nose, makes ears out of coconut flakes and tiny black candies for eyes……turns them into mice 😉

Oh, those look amazing. I always get a box of chocolate cherries every year. Not the good ones with the clear liquid, but the 99 cent ones with the opaque pink gel.
Still, they are pretty good. These look better!

I’ve never had a homemade chocolate covered cherry…oh my gosh I bet they are delicious. Maybe I will try this after the New Year. Oh….my…God! Those look brilliant. They are basically what they sell as a Cherry Blossum here in Canada only so much nicer as the ingredients aren’t cheap commercial candy. I am so happy to have this recipe and thank you so much for sharing.
