Looks like our evening skies, but for different reasons. They still fire the cane here and there before cutting it, and the favourite time is early evening because the wind has died down. We get some spectacular ‘fire sunsets’, and a suggestion of burned caramel on the breeze…
Freshly cut cane smells like a cross between brown sugar, cut grass and a tiny hint of vinegar. It’s a unique smell. Burning the cane before you cut it adds a smoky note.
